One Banana- Banana Bread Muffins

Not sure if y'all knew this but… Dessert is our love language! One of our most effective nutrition practices is to choose fresh, home-prepared foods over store bought options. Knowing what ingredients go into our meals and snacks is a huge advantage- especially when it comes to tracking macronutrients and caloric intake.

Healthy Banana Bread Muffin recipe. Mini muffins, carb friendly, gluten free muffins


Prep Time: 15 minutes

Cook Time: 20 minutes





What You’ll Need:


Mixing Bowls

Hand Mixer (or Whisk)

Measuring cups and spoons

A Muffin Pan


Ingredients

½ cup (100g) NOW Foods Monkfruit

½ cup (60g) all-purpose flour

¼ teaspoon ground nutmeg

¼ teaspoon baking powder

⅛ teaspoon baking soda

⅛ teaspoon salt *

1 medium overripe banana

1 large egg

3 tablespoons (42g) salted butter

1 c. Chocolate chips




The Process:

  1. Preheat the oven to 325 degrees

  2. In a medium bowl, whisk together monk fruit, flour, baking powder, baking soda, nutmeg, and salt.

  3. In a separate bowl, mash the banana and whisk in the egg until well-combined. Pour banana mixture into the dry ingredients and mix until just-combined.

  4. Lightly mix in the melted butter and half of the chocolate chips

  5. Transfer the batter to the muffin pan, leaving 2 cm of space for the batter to expand. Sprinkle remainder of the chocolate chips in each muffin

  6. Bake for 20 minutes or until a toothpick inserted into the center comes out clean.

  7. Let the muffins cool for 5-10 minutes (or burn your mouth like us lol) and enjoy!
