Low Carb Bread Pudding?!

Yes. We said what we said. We’re bringing you our favorite low-carb dessert recipe just in time for cozy season!

This recipe was birthed through the innovation of Schmidt Old Tyme’s good ‘ol 647 Bread. The macros on these babies are a gift from above!

👩🏽‍🍳The Recipe:

Ingredients:

3/4 c. almond milk

3/4 c. unsweetened applesauce

2 eggs lightly beaten

¼ cup honey OR ½ tbsp Monk Fruit

1 tsp vanilla extract

1/2 tbsp cinnamon

1/2 tsp nutmeg

¼ tsp salt

½ loaf 647 multi grain bread (ripped into 2in. pieces)

½ loaf 647 potato bread (ripped into 2in. pieces)

Optional:

1 apple, peel on, diced

½ cup raisins

¼ cup walnuts

🥣Combine all wet and dry ingredients in a bowl and then fold into bread pieces. Let them saturate in the fridge (or dont- if you’re ready to enjoy ASAP). Fold in the apples, raisins, and walnuts right before scooping into the muffin pan.

⏲️Get ‘em in the oven for 25–35 minutes and let them cool for at least 15 min. Or burn your mouth, risk it all and eventually taste that bready goodness.
